Apples Meringues a LA Poutdguaise

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apples

  1. Prepare apple marmalade with 12 apples.

  2. Halve, peel, and core the apples.

  3. Place the apples in a deep sauté pan greased with butter.

  4. Sprinkle sugar and grated lemon peel over the apples.

  5. Bake the apples in a 350°F (175°C) oven.

Assemble the dessert

  1. Prepare a partially baked pastry case.

  2. Fill the pastry case with the apple marmalade, leaving a well in the center.

  3. Arrange the baked apple halves in a dome shape on top of the marmalade.

  4. Leave the center hollow.

  5. Fill the hollow with pastry custard.

  6. Cover the entire dome with orange marmalade.

Make and bake the meringue

  1. Whip the egg whites until firm.

  2. Mix in the sifted sugar to create meringue.

  3. Spread the meringue over the apple dome.

  4. Use a piping bag to create a design on the meringue.

  5. Sprinkle sifted sugar on top.

  6. Bake until the meringue is a light fawn color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk of the filling and soft, sweet fruit flavor once baked.
Egg whites
Whipped into foam that sets into a light, crisp-topped meringue when baked.
Sugar
Sweetens the fruit and, dissolved into the whites, stabilizes the meringue and helps it brown.
Pastry custard
Adds a smooth, rich filling that contrasts with the baked apples.
Orange marmalade
Adds sweetness and tangy citrus flavor over the dome.

The step that matters

Whip the egg whites until firm. Egg whites must be beaten to stiff, stable foam before sugar is added; under-whipped or greasy whites will not hold the meringue's structure in the oven.

Swap the apple

How well each one fits the dish's main ingredients (butter, sugar, lemon, orange, egg):

  1. Vanillafits better
  2. Blackberryfits better
  3. Figfits better
  4. Applethe original

Fit is the average pairing score against butter, sugar, lemon, orange, egg. Candidates are from the same food group and used in at least 100 recipes.
