Brown-bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. In a basin, mix the bread crumbs, sugar, whipped cream, lemon peel, cinnamon, morel cherries, and eggs, ensuring the egg whites are whipped firm.

  2. Grease a round mold and sprinkle some bread crumbs inside.

  3. Layer the mixture and morel cherries in the mold.

Bake and serve

  1. Bake on a baking sheet in a moderate oven (350°F / 175°C) until done.

  2. Turn out onto a dish, sprinkle with cinnamon-sugar, pour cherry sauce around it, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the pudding lift and a light, set structure as they cook.
Bread crumbs
Absorb the custard-like mixture and form the body of the pudding.
Whipped cream
Adds moisture and richness, giving a softer, more tender crumb.
Sugar
Adds sweetness and helps the pudding brown lightly as it bakes.
Morel cherries
Add fruit flavor and moisture, layered through the pudding.

The step that matters

Whipping the egg whites firm. Firmly whipped whites trap air that expands in the oven and sets the pudding. Under-whipped whites leave it dense and flat.
