Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Puff Paste
Ingredients
Directions
Sprinkle a clean surface with flour and place ¼ cup of flour in the center.
Make a hole in the center of the flour.
Add the yolk of half an egg into the hole (reserve the white).
Squeeze in six drops of lemon juice.
Wrap the butter in a clean cloth and squeeze to remove excess water.
Add 1 tablespoon of water to the lemon juice, egg yolk, and flour, and mix until the paste is the same consistency as the butter.
Flour a rolling pin and the surface, then roll the paste into a square about ¼ inch thick.
Place the pat of butter in the center and fold the paste over to enclose the butter, pressing the edges together.
Refrigerate for 10-15 minutes, or proceed immediately if it's cold.
Flour the surface again and roll the paste out to 2 feet long.
Fold one-third of the length over, then fold the other end over it.
Bring the rough edges towards you, roll the paste out, and fold it into thirds again.
Let it rest in a cool place for 10-15 minutes, then roll it out again.
Repeat the resting and rolling process one more time. The paste is now ready.
