Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Thick raw cream
Whipped by the whisking to form the light, thick body of the syllabub.
Refined sugar
Sweetens the cream and helps stabilise the whisked foam.
Fine raisin wine
Adds liquid and flavour, and its acidity thickens the cream as it stands.
Lemon juice
Adds acidity that sharpens the flavour and helps thicken the cream.
Lemon peel
Contributes aromatic oils that give a bright citrus fragrance.

The step that matters

Whisking for 30 minutes in one direction. Steady whisking incorporates air and thickens the cream into a stable foam. Stopping early or changing direction can leave the mixture thin or cause it to lose its structure.

Swap the raisin

How well each one fits the dish's main ingredients (cream, sugar, wine, lemon):

  1. Orangefits better
  2. Vanillafits better
  3. Raspberryfits better
  4. Raisinthe original

Fit is the average pairing score against cream, sugar, wine, lemon. Candidates are from the same food group and used in at least 100 recipes.
