Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. Halve, peel, and core another 12 apples.

  3. Grease a deep sauté pan with butter.

  4. Place the apple halves inside.

  5. Sprinkle sugar over the apples.

  6. Sprinkle grated lemon peel over the apples.

  7. Bake in a 350°F (175°C) oven until tender.

Assemble the dessert

  1. Prepare a small quantity of pastry-custard.

  2. Partially bake an ornamented case.

  3. Fill the case with apple marmalade.

  4. Leave a well in the center.

  5. Arrange the baked apple halves in a dome shape on top of the marmalade.

  6. Fill the center well with pastry-custard.

What each ingredient does

Apples
Provide the bulk of the filling, softening when baked and forming the fruit dome.
Egg whites
Whipped into a foam that sets when baked, forming the light meringue topping.
Sugar
Sweetens the apples and meringue and helps the whipped whites hold their structure.
Orange marmalade
Adds concentrated fruit sweetness and tartness over the dome.
Pastry-custard
Adds a rich, soft custard layer filling the centre well.

The step that matters

Whipping the egg whites until firm. Egg whites must be whipped to stiff peaks without any trace of fat or yolk, because fat prevents the foam from trapping air. Stable foam is what lets the meringue hold its shape and bake light.
