What each ingredient does

Hominy
Forms the main body of the dish, softening and thickening as it simmers in water.

The step that matters

Stirring the hominy into the boiling water. Hominy can clump and stick to the bottom of the pot if added unevenly or left unstirred, so stirring often during the long simmer helps keep it smooth and prevents scorching.
