What each ingredient does

Whipped cream
Adds richness and a light, airy texture to the set dessert.
Rhubarb puree
Supplies the main rhubarb flavour and moisture to the cream.
Gelatin
Sets the cream so it holds its shape when unmolded.
Caster sugar
Sweetens the cream and balances the tartness of the rhubarb.
Lemon juice
Adds acidity that brightens the rhubarb flavour.

The step that matters

Strain the gelatin into the cream mixture. Gelatin must be dissolved and cooled before it is added. If it is too hot it can melt the whipped cream and deflate its air, while gelatin added in lumps sets unevenly and leaves a rubbery texture.
