To Broil Mutton Chops

Ingredients

Directions

Prepare and broil

  1. Cut mutton chops from the middle of the loin, about the same thickness as steaks.

  2. Broil the chops in the same manner as steaks, giving them equal attention.

  3. Sprinkle a little salt over the chops.

Serve

  1. Serve immediately without butter, as the chops are sufficiently fatty.

  2. Mushroom sauce may be served on the side.

What each ingredient does

Mutton chops
Their meat and fat carry the flavour and juiciness, and the fat keeps them moist under the broiler.

The step that matters

Broil with close attention. Broil the chops with the same close attention given to steaks. Thin chops cook quickly under high heat, so the outside can char before the centre is done. Watching them closely prevents dry, overcooked meat.
