Directions

Prepare the steaks

  1. Cut the steaks as for broiling.

  2. Heat the butter or dripping in a pan.

  3. Add the steaks and turn them frequently until browned all over.

Make the gravy

  1. Place the finished steaks in a hot dish.

  2. Pour away the fat from the pan.

  3. Add water, pepper, salt, and ketchup to the pan and let it boil.

  4. If using onions, slice them thin and fry in the remaining fat until soft after cooking the steak.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beefsteak
Is the main protein, browned in fat to develop a savoury crust and flavour.
Butter or dripping
Conducts heat for browning the steaks and adds richness to the pan.
Ketchup
Adds sweetness and acidity to the pan liquid, shaping the flavour of the gravy.

The step that matters

Browning the steaks. The steaks must be turned often in hot fat so they brown evenly on the outside. Overcrowding or low heat makes them steam and turn grey, losing the browned flavour that the gravy is built on.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (butter, pepper, ketchup):

  1. Capsicumfits better
  2. Shallotfits about as well
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against butter, pepper, ketchup. Candidates are from the same food group and used in at least 100 recipes.
