What each ingredient does

Cow-heel
Provides gelatin-rich connective tissue that softens into a tender, gelatinous texture during long simmering.
Parsley sauce
Adds a creamy, savoury coating that complements the mild, rich meat.

The step that matters

Boiling off the first water. Blanching the heel in cold water then discarding that water removes impurities and scum that would otherwise cloud the cooking liquid and dull the flavour.
