Pried Fish

Ingredients

Directions

  1. In a kettle, combine cold water and salt, then skim the surface.

  2. Bring a separate kettle of water to a rapid boil.

  3. Place the fish on a drainer and submerge it in the boiling water.

  4. Boil the fish rapidly for 3 to 4 minutes, then skim the surface.

  5. Reduce heat and simmer gently until the fish is cooked.

  6. Check for doneness: fins should remove easily, skin should crack, or a skewer should pass easily near the bone.

  7. Do not leave the fish in the water after cooking; keep it warm by placing it on a drainer over hot water and covering it with a cloth.
