Make the dough

  1. In a bowl, combine flour and butter, rubbing them together until the mixture resembles bread crumbs.

  2. Beat the sugar and egg yolk together, then pour into a well in the center of the flour mixture.

  3. Add lemon juice and enough cold water to form a soft paste.

Roll out

  1. Turn the mixture onto a lightly floured surface and roll it out to the desired thickness.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the pastry together once water is added.
Butter
Rubbed into the flour to coat particles, keeping the pastry short and tender.
Egg yolk
Adds richness and helps bind the dough.
Powdered sugar
Adds sweetness and fine texture to the crust.
Lemon juice
Adds acidity and a bright flavor to the pastry.

The step that matters

Rubbing in the butter. If the butter becomes soft or melts, it coats the flour unevenly and makes the pastry tough rather than short and crumbly. Keeping the butter cold and working it in lightly helps the flour stay separate and tender.
