Rhubarb Tart

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the leaves and skins from the rhubarb.

  2. Cut the stalks into 1-inch pieces.

  3. Fill a dish high in the center with the rhubarb pieces.

  4. Add the sugar, lemon rind, and water.

  5. Optionally, stew the rhubarb before baking to increase the amount you can fit in the dish.

Bake

  1. Cover the dish and bake at 350°F (175°C) for 30 minutes.
