Why it works: Lemon and sherry are a kitchen classic. They rank in the top 17% of all ingredient pairs, and 3,273 recipes mention both. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓

Ingredients
Directions
Make the jelly
In a saucepan, combine water, sugar, lemon rind, and lemon juice, avoiding the white pith and seeds.
Wash the eggs and add the whites and shells to the saucepan.
Whisk the mixture over heat until frothy, then let it boil.
Remove from heat and let it sit covered for 20 minutes.
Strain and finish
Prepare a kitchen chair by covering its legs with a clean linen cloth and securing it.
Pour boiling water through the cloth two or three times, then place a heated basin under the cloth.
Quickly pour the jelly into the cloth, replacing basins as needed until the jelly is clear.
Add sherry or brandy to the clear jelly.
Set and serve
Pour the jelly into a mold that has been filled with cold water, then let it set in a cool place for about 10 hours.
To unmold, dip the mold in tepid water, invert it on a dish, and gently shake to release.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg whites
- Egg whites and shells are whisked in to gather impurities and clarify the jelly as it heats.
- Sugar
- Adds sweetness and helps give the set jelly its body.
- Lemon juice
- Adds acidity and bright lemon flavor to the jelly.
- Lemon rind
- Adds aromatic lemon oil and flavor to the liquid as it steeps.
The step that matters
Straining through the cloth until clear. Pouring quickly and reheating the basin keeps the jelly warm so it stays liquid and passes through the cloth. Rushing or letting it cool can leave it cloudy, since the egg white has to trap the particles before they are filtered out.
Flavor stand-ins for the lemon

- Pineapplebetter flavor fit
- Lemonthe original
Fit is the average pairing score against sugar, egg, sherry. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
