To Dress Chestnuts

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Select good, sound chestnuts.

  2. Cut a small piece of the skin off each chestnut to prevent bursting.

Boil and dry

  1. Place them in a saucepan with cold water and bring to a boil.

  2. Boil for 15 minutes.

  3. Drain the chestnuts and wipe them dry.

Roast and serve

  1. Roast them in a small frying pan or in the oven at 400°F (200°C) for 10 minutes.

  2. Serve in a napkin to keep them hot.

What each ingredient does

Chestnuts
Form the main body of the dish, becoming soft and starchy when cooked and roasted.
Water
Cooks the chestnuts through in the boiling step, softening the flesh before roasting.

The step that matters

Cutting the skin before boiling. A small cut in the shell lets steam escape as the chestnut heats, so it does not burst in the water or while roasting.
