Dressed Fish in General

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Melt 67 ounces of butter and mix with mushroom juice, white wine, and oyster liquor.

  3. Season with pepper and coarse sea salt.

  4. Place bits of butter over the fish and bake, basting frequently with its own liquor.

  5. Once cooked, carefully transfer the fish to a serving dish and keep warm.

  6. In a saucepan, melt 2 ounces of butter, then stir in 2 ounces of flour.

  7. Moisten with the liquor from the fish and season with nutmeg, cayenne, lemon juice, anchovy, and sherry.

  8. Cook for 10 minutes, then mix in 4 yolks of eggs, ½ cup cream, prawns, mushrooms, oysters, and lobster butter.

  9. Heat the sauce without boiling, then pour it over the fish and serve.
