Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bones
Release flavour, gelatin and body into the water during long simmering.
Onion
Adds savoury sweetness and aroma to the broth.
Carrot
Adds natural sweetness and colour to the broth.
Parsnip
Adds sweetness and body to the broth as it cooks.
Turnip
Adds mild sweetness and body to the broth as it cooks.

The step that matters

Skim the soup. Foam and fat rising during the early boil can make the broth cloudy and greasy. Skimming removes these impurities so the finished soup stays clearer and cleaner in flavour.

Swap the mace

How well each one fits the dish's main ingredients (carrot, onion, parsnip, turnip, allspice):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against carrot, onion, parsnip, turnip, allspice. Candidates are from the same food group and used in at least 100 recipes.
