What each ingredient does

Codlings
Provide the main fish body that gives the broth its flavor and substance.
Lobster meat
Adds sweet, delicate seafood flavor and richness to the finished soup.
Egg yolks
Bind the forcemeat so the balls hold together and turn tender when simmered.
Butter
Adds richness and moisture to the forcemeat balls.
Bread crumbs
Absorb liquid and give the forcemeat balls body and a soft texture.
Anchovies
Contribute savory depth and salty umami to the broth.

The step that matters

Simmering the broth for 2 hours. A gentle simmer extracts flavor from the fish and vegetables without clouding the broth. Boiling hard can break up the fish and make the soup cloudy and greasy.

Swap the white pepper
