Why it works: Pepper and capsicum match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,571 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Pickled Walnuts

Ingredients

Directions

  1. Run a large needle through each walnut in several places.

  2. Soak the walnuts in a strong brine of coarse sea salt for 10 to 12 days.

  3. Decant the brine and transfer the walnuts to a stone jar.

  4. Heat vinegar nearly to boiling and pour it over the walnuts to cover them.

  5. Simmer long pepper, capsicum, ginger, mustard seed, mace, and pimento with the vinegar for a few minutes.

  6. Let the walnuts sit for about six months before using.
