Why it works: Lemon and sherry are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 3,273 recipes. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓
Calves’ Feet Jelly
Ingredients
Directions
Prepare the stock
Clean and slit the calf feet.
Boil them slowly in 5 quarts of water until more than half is reduced.
Skim the stock and strain it off.
When cold, remove the top fat and sediment.
Make the jelly
In a preserving pan, combine the jelly stock, white sugar, lemon peel, lemon juice, Madeira or Sherry, whisked egg whites, and crushed eggshells.
Stir well and heat the pan, avoiding agitation once it starts to heat.
Let it boil slowly for 12 to 15 minutes, then add a little cold water and boil for another 5 minutes.
Cover the pan with a flannel cloth and let it settle for 30 minutes.
Pour the jelly into a flannel jelly bag and strain until perfectly clear, then fill the molds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Calf feet
- Break down into gelatin that sets the stock into a firm jelly.
- Egg whites
- Bind to impurities as they heat, which are then strained out to clarify the jelly.
- Lemon juice
- Adds acidity that brightens the flavour and helps the jelly taste clean.
- Madeira or sherry
- Adds aroma and depth of flavour to the finished jelly.
- White sugar
- Adds sweetness and balances the acidity of the lemon juice.
The step that matters
Avoiding agitation once the pan heats. Stirring or jostling the pan once the mixture starts to heat breaks up the egg white raft that traps impurities. Those particles then stay in the jelly, leaving it cloudy instead of clear.
