Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
To Roast Ducks
Ingredients
Directions
Prepare the ducks
Remove the heads and necks from the ducks, leaving the feet on.
Hold the ducks in boiling water for a few minutes to loosen the skin, then peel it off.
Wash the inside of the ducks with water and wipe the outside with a dry cloth.
Stuff the ducks with a mixture of parboiled onions, minced sage, salt, pepper, and butter if desired.
Cut off the pinions at the first joint and truss the feet behind the backs.
Roast and serve
Spit the ducks firmly and roast them over a brisk fire, basting constantly.
When the breasts are plump and steam draws towards the fire, serve quickly with brown gravy.

What each ingredient does
- Ducks
- Provide the main meat, whose fat renders and bastes the bird as it roasts.
- Onions
- Add moisture and mild sweetness to the stuffing as they soften and flavour the inside of the bird.
- Sage
- Adds an earthy, aromatic flavour that pairs well with rich duck meat.
- Butter
- Adds fat and richness, helping the skin brown and the meat stay moist.
The step that matters
Roasting over a brisk fire while basting constantly. Duck skin holds a thick layer of fat that must render out slowly and evenly. Constant basting keeps the surface moist and helps the skin brown without drying the meat, while a brisk fire cooks it through. Serving promptly, once the breasts are plump, keeps the meat juicy.
