The book says “a fierce oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Roll out the puff pastry very thin and square.
Place it on a baking sheet and spread the jam, leaving a 1-inch border.
Roll out a second piece of pastry to the same size and moisten the edges with beaten egg or water.
Carefully place the second pastry over the jam and press the edges to seal.
Brush the top with water and sprinkle with sugar.
Mark the pastry into uniform divisions with a knife.
Bake in a preheated oven at 350°F (175°C) for 20 to 25 minutes.
Cut while still hot along the marked lines.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
