Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard

  1. Simmer the milk, lemon rind, and bruised almonds (or cinnamon) for 10 to 20 minutes.

  2. In a bowl, combine the cream (if using), sugar, and eggs.

  3. Add the simmered mixture to the egg mixture gradually.

Assemble and soak

  1. Layer the bread and butter in a baking dish.

  2. Add currants and candied rind between layers.

  3. Pour the egg mixture over the layered bread.

  4. Let it soak for 2 hours.

Bake

  1. Preheat the oven to 350°F (175°C).

  2. Bake for 30 minutes until set.

What each ingredient does

Eggs
Set the custard and bind the pudding into a firm, sliceable structure as they cook.
Milk
Forms the liquid base of the custard, giving the pudding its soft, moist texture.
Bread
Soaks up the custard, forming the body of the pudding as it bakes.
Sugar
Sweetens the custard and adds to its browning as it bakes.
Cream
Adds richness and fat, producing a smoother, softer custard.

The step that matters

Add the simmered mixture to the egg mixture gradually. Pouring hot liquid into eggs too quickly can scramble them. Adding it slowly while whisking tempers the eggs so the custard stays smooth and sets evenly.
