Baked Puddings

Ingredients

Directions

The book says “a gentle oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard base

  1. Boil 1¼ pints of new milk and dissolve 3 ounces of sugar in it.

  2. Grate in the rind of a small lemon and let it cool slightly.

  3. Add ½ cup of brandy while the mixture is still warm.

Soak and bake

  1. Pour the mixture over the sponge cakes and let it sit for 1 hour.

  2. Strain 1 ounce of clarified butter over the top or sprinkle with sifted sugar.

  3. Bake in a gentle oven at 300°F (150°C) for 45 minutes or longer.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

New milk
Forms the liquid base that soaks into the sponge and sets as the custard.
Sponge cakes
Provide the bulk and absorbent structure that soaks up the custard mixture.
Sugar
Sweetens the custard and helps it brown lightly on the surface.
Clarified butter
Adds richness and helps the top brown as it bakes.
Brandy
Adds aroma and flavor to the custard.

The step that matters

Pour the mixture over the sponge cakes and let it sit for 1 hour. The sponge needs time to absorb the warm custard evenly; if it is not soaked through, the baked pudding can have dry pockets or uneven texture.

Swap the lemon

How well each one fits the dish's main ingredients (milk, sugar, brandy, egg, butter):
