What each ingredient does

Gherkins
Are the vegetable being pickled, so they provide the main texture and crunch of the finished dish.
Vinegar
Provides the acidity that preserves the gherkins and gives the pickle its sharp flavour.
Coarse sea salt
Seasons the brine and helps draw out moisture and firm the gherkins.
Ginger
Adds aromatic warmth that flavours the pickling liquid.

The step that matters

Covering the gherkins fully with boiling pickle. Gherkins left partly exposed above the liquid can spoil or soften, because the acidic brine must cover them to preserve them evenly.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, ginger):

  1. Allspicefits better
  2. Clovefits better
  3. Turmericfits better
  4. Macethe original
