Directions

Prepare the cutlets

  1. Select large lobster tails and remove them whole.

  2. Slice the tails into pieces about ⅓ inch thick.

  3. Dip each piece into beaten egg, then coat with seasoned bread crumbs.

  4. Egg and crumb the pieces twice, pressing the crumbs firmly with a knife.

Fry and serve

  1. Fry the cutlets quickly in good butter until light brown.

  2. Serve arranged in a chain on a hot dish, with sauce in the center.

  3. For the sauce, heat claw meat in melted butter, adding essence of anchovies, chili vinegar, salt, mace, and lobster coral.

  4. Optionally, add whole or pounded shrimps to the sauce.

What each ingredient does

Lobster tails
Provide the main meat, sliced into pieces that are cooked as cutlets.
Beaten egg
Acts as a binder so the bread crumbs adhere to each piece.
Fine bread crumbs
Form a crisp, golden coating that browns when fried in butter.
Good butter
Fries the cutlets, adding richness and browning the crumb coating.
Lobster coral
Adds rich flavor and color to the sauce.

The step that matters

Frying the cutlets quickly in butter. Lobster meat is delicate and overcooks easily, turning tough and dry. A quick fry over moderate heat browns the crumb coating while keeping the lobster tender inside.

Swap the mace

How well each one fits the dish's main ingredients (lobster, egg, bread, pepper, nutmeg, butter, vinegar):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Cinnamonfits better
  4. Macethe original

Fit is the average pairing score against lobster, egg, bread, pepper, nutmeg, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
