What each ingredient does

Coriander seed
Provides the main citrusy, aromatic body of the blend.
Black pepper
Adds sharp, pungent heat that gives the blend its bite.
Cumin seed
Contributes warm, earthy aroma characteristic of curry flavour.
Fenugreek seed
Adds a bitter, maple-like aroma typical of curry powders.
Cayenne pepper
Supplies capsaicin heat, adjustable by quantity in the blend.
Turmeric
Gives the powder its yellow colour and earthy, mildly bitter flavour.

The step that matters

Drying the powder before the fire. Residual moisture lets the ground spices clump and spoil, and dry ground spices lose aroma when heated too strongly. Turning the powder often gives even drying, and it must be fully dry before bottling to prevent mould and flavour loss in storage.
