Why it works: Clove and nutmeg match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,686 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Cucumbers
Ingredients
Directions
Prepare a brine with salt and water strong enough to float an egg.
Boil the brine, skim it, and pour it over the cucumbers.
Let the cucumbers sit in the brine for 24 hours.
Strain the cucumbers and dry them with a cloth.
In a pot, combine white wine vinegar, cloves, sliced mace, nutmeg, white peppercorns, long pepper, and ginger; boil together.
Add the cucumbers and a few vine leaves to the pot, simmering until the cucumbers turn green without boiling.
Transfer the cucumbers to jars, seal tightly, and once cooled, cover with a bladder and leather.
