Mutton and Lamb

Ingredients

Directions

  1. Cut the mutton or lamb into thin slices or leave it whole.

  2. If sliced, simmer for 4 hours; if whole, braise and press between two dishes with a heavy weight.

  3. Dip the pieces in beaten eggs and coat with bread crumbs.

  4. Fry the slices until golden brown.

  5. Serve with peas in the center or a thick vegetable puree.

  6. For vol-au-vents, mix with béchamel sauce and keep very white.

  7. For a curry, cook with plenty of vegetables or other meat.
