Apple, Peach, Apricot, or Orange Fritters

Ingredients

Directions

  1. Core the apples without dividing them and slice into rounds.

  2. Dip the apple slices into the batter and fry until pale brown and dry.

  3. Serve the fritters heaped on a folded napkin and sprinkle with sifted sugar.

  4. For oranges, remove the outer rind and white inner skin, slice, and remove the seeds.

  5. Dip the orange slices into the batter and fry as with the apple fritters.

  6. Peel, halve, and stone the peaches and apricots, then dip into the batter.

  7. If the peaches or apricots are not fully ripe, stew them tender in a thin syrup first.
