Assemble the pie

  1. Layer the sliced potatoes in a pie dish, adding chopped onion, pepper, and salt between each layer.

  2. Pour in the water and dot the top with pieces of butter.

  3. Cover the pie with puff pastry and seal it well.

Bake and serve

What each ingredient does

Potatoes
Form the bulk of the pie and become tender as they cook in the water and butter.
Butter
Adds richness and fat, helping the top of the pastry brown in the oven.
Onion
Adds savory flavor that mellows and sweetens as it bakes with the potatoes.
Puff pastry
Forms a crisp, flaky sealed crust that traps steam and browns during baking.

The step that matters

Sealing the puff pastry. A tight seal keeps steam inside so the potatoes cook through and soften. A leaky seal lets moisture escape, which can leave the filling dry and the pastry soggy at the edges.

Swap the onion

How well each one fits the dish's main ingredients (potato, pepper, butter, egg, mushroom, ketchup):

  1. Capsicumfits better
