Mushroom Catchup

Ingredients

Directions

  1. Select fresh, full-grown mushrooms starting in September.

  2. Layer mushrooms in a deep earthen pan, sprinkling each layer with coarse sea salt.

  3. Repeat layering until all mushrooms are used, finishing with salt on top.

  4. Let the mixture sit for 2-3 hours to allow the salt to penetrate.

  5. Pound the mushrooms in a mortar or mash them well.
