Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the hot milk and form the soft, bready body of the pudding.
Milk
Softens the crumbs and provides moisture so the pudding stays tender.
Eggs
Bind the mixture and set as it cooks, giving the pudding its structure.
Sugar
Adds sweetness and contributes to a pleasant flavour and browning.

The step that matters

Cover the mold with a cloth. Covering the mold traps steam so the pudding cooks gently and stays moist. Water boiling around the mold must not seep in, so the cover should be secured well.

Swap the nutmeg

How well each one fits the dish's main ingredients (bread, milk, sugar, egg, butter, flour):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against bread, milk, sugar, egg, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
