Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Double cream
Provides the rich fat and body that gives the dessert its smooth, creamy texture.
Isinglass
A gelatin-like setting agent that firms the cream when chilled so it holds its shape.
Sugar
Adds sweetness and balances the acidity of the lemon and brandy.
Brandy
Adds aroma and flavour depth to the cream.
Lemon juice
Adds acidity that brightens the flavour and cuts the richness of the cream.

The step that matters

Dissolving the isinglass completely. Isinglass must fully dissolve in hot water before being stirred into the cream; undissolved specks will not set evenly and leave a grainy, uneven texture once chilled.

Swap the lemon

How well each one fits the dish's main ingredients (brandy, sugar, cream):

  1. Vanillafits better
  2. Apricotfits better
  3. Strawberryfits better
  4. Lemonthe original

Fit is the average pairing score against brandy, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
