Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Pound the almonds in a mortar until fine.

  2. Mix in the egg whites, sifted sugar, lemon peel, and egg yolks until well combined.

  3. Beat the 12 egg whites to a solid froth and gently fold into the mixture.

  4. Add the sifted flour and mix until just combined.

Bake and cool

  1. Prepare a mold and pour in the mixture.

  2. Bake in a slow oven at 300°F (150°C) for 1 hour.

  3. Carefully remove from the mold and place on a sieve to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to a froth, they trap air that lifts the cake and gives it a light, airy crumb.
Egg yolks
Add richness and moisture, and help bind the batter into a tender crumb.
Blanched almonds
Ground to form the bulk of the cake, giving it a moist, tender texture and nutty flavor.
Sifted loaf sugar
Sweetens the cake and helps stabilize the whipped egg whites while contributing to browning.
Sifted dry flour
Provides a small amount of structure so the cake holds its shape after baking.

The step that matters

Folding in the whipped egg whites. Whites must be beaten to a solid froth and folded in gently. Overmixing deflates the air bubbles that give the sponge its rise, leaving a dense cake.
