Curd and Cream Mould

Ingredients

Directions

  1. In a pot, combine the curd and set it near the fire. Stir well.

  2. Beat the yolks of the eggs with nutmeg, lemon peel, and brandy in a basin.

  3. Add the egg mixture to the curd along with the currants and stir well.

  4. Prepare your tins lined with Puff Paste, notching the edges.

  5. Fill each tin with the curd mixture and bake for 20 minutes.

  6. For a variety, use a mould with holes for the curd and let it stand for 6 hours.

  7. Carefully turn the mould out onto a dish and pour over the cream sweetened with loaf sugar and nutmeg.
