What each ingredient does

Large fresh cucumbers
Form the pickle itself, becoming crisp and tender as they absorb the syrup.
Coarse sea salt
Draws water out of the cucumbers and firms their texture during the saltwater soak.
A small lump of alum
Helps the cucumbers stay firm and crisp through repeated heating.
Sugar
Makes the syrup that sweetens the cucumbers and preserves them as it penetrates.

The step that matters

Repeated boiling and resting of the syrup. Sugar syrup must be reheated and poured over the cucumbers several times so it slowly replaces the water in the cucumber flesh. Boiling too early or too briefly leaves the pickles watery and less preserved.
