What each ingredient does

French gelatine
Forms the gel that sets the jelly into a firm, sliceable body.
Syrup
Provides sweetness and the liquid base that the gelatine sets in.
Orange juice
Adds the main citrus flavour and acidity, and most of the liquid volume.
Lemon juice
Adds sharp acidity that balances the sweetness of the syrup.
Orange rind
Contributes aromatic oils and bitter edge from the simmered peel.

The step that matters

Dissolve the gelatine fully before adding the juices. Gelatine must be completely dissolved and evenly distributed to set properly; undissolved granules leave weak or grainy patches in the finished jelly.

Swap the orange

How well each one fits the dish's main ingredients (syrup, lemon):

  1. Orangethe original
  2. Limefits about as well
  3. Raspberryfits less well
  4. Vanillafits less well

Fit is the average pairing score against syrup, lemon. Candidates are from the same food group and used in at least 100 recipes.
