What each ingredient does

Milk
Forms the body of the junket, which sets into a soft curd when rennet is added.
Rennet
Enzyme that coagulates the milk proteins, turning the warm liquid into a set custard-like curd.
Cream
Adds richness and fat, giving a smoother, softer texture to the set junket.
Brandy
Adds aroma and flavour to the dish.
Lemon
Its rind, rubbed into the sugar, contributes aromatic oils and fragrance.

The step that matters

Heating the milk and cream. The milk should be warm but not boiling, because rennet works best at body temperature and boiling can damage the milk's texture and prevent a smooth set.
