Set and mould

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and body, and holds the light structure once whipped.
Egg white
Its proteins trap air when whipped, creating the frothy, light texture.
Isinglass
A gelatin-like setting agent that firms the cream as it cools.
Sugar
Sweetens the cream and helps stabilise the foam.
Sherry or sweet white wine
Adds flavour and a fruity aroma to the cream.
Lemon rind
Its volatile oils add a bright citrus aroma.

The step that matters

Stirring the dissolved isinglass into the cream. Isinglass must be fully dissolved and evenly mixed before the cream cools, because it sets as it chills. Lumps or uneven mixing will leave the dessert with patchy firmness.
