Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the cream as they set gently over low heat, giving it a smooth, rich body.
Cream
Provides fat and richness, giving the dessert its smooth, velvety texture.
Preserved ginger
Adds the main aroma and spicy flavour that defines the dish.
Isinglass
Sets the cream as it cools, helping it hold its shape when chilled.

The step that matters

Stir over low heat until thickened. Egg yolks scramble if heated too quickly. Gentle, steady heat lets them thicken the cream smoothly instead of curdling it.

Swap the ginger

How well each one fits the dish's main ingredients (egg, cream, syrup, sugar):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Gingerthe original
  4. Peppermintfits less well

Fit is the average pairing score against egg, cream, syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
