Lemon Cheesecakes

Oven, in the book's wordsA good brisk oven

Ingredients

Directions

The book says “a good brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the lemon curd

  1. Combine butter, sugar, eggs, grated lemon rind, and strained lemon juice in a saucepan.

  2. Stir the mixture over low heat until the sugar dissolves and it thickens to a honey-like consistency.

Store or bake

  1. Pour the mixture into small jars and store in a dry place for 3 to 4 months.

  2. Add pounded almonds, candied peel, or grated sweet biscuit to the mixture to make cheesecakes.

  3. Line patty pans with puff pastry, fill them more than halfway with the mixture, and bake at 400°F (200°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a smooth, silky body to the mixture.
Eggs
Thicken the mixture as they cook and set it into a custard-like texture.
Sugar
Sweetens the mixture and helps it dissolve and thicken into a spread.
Lemon juice
Provides acidity and sharp lemon flavour that balances the sweetness.

The step that matters

Stirring over low heat. Eggs thicken gently at low temperature; too much heat can scramble them into lumps, so keep the heat low and stir constantly.
