Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the liquid into a firm, wobbly gel as it cools.
Whites of 3 eggs
Whipped into the mixture to create a light, airy, foamy texture.
Pounded sugar
Sweetens the dish and balances the sharpness of the lemon juice.
Lemon juice
Provides the sharp, acidic lemon flavour that defines the dish.

The step that matters

Let the mixture cool until it just begins to thicken before folding in the egg whites. If the mixture is still very hot, it will deflate the beaten whites and prevent a light foam. If it has already set too firmly, the whites will not blend in evenly, so timing matters.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
