What each ingredient does

Pheasants
Provide the main meat, which becomes tender through simmering and is shredded back into the soup.
Butter
Adds richness and fat that carries the flavor of the onions and celery.
French rolls
Their crumbs thicken the broth slightly and add body to the soup.
Hard-boiled egg yolks
Their soft, crumbly texture enriches the soup and gives it a creamier body.
Onions
Soften during cooking and add sweetness and savory depth to the base.
