Lamb Cutlets and Gbeen Peas

Ingredients

Directions

  1. Trim the lamb cutlets nicely and fry them carefully.

  2. When almost cold, dip each cutlet up to the bone in stiff Allemande sauce flavored with mushrooms.

  3. Set each cutlet flat on a baking tin or dish on rough ice to help the sauce set firmly.

  4. Brush the cutlets with egg yolk and coat them with bread crumbs.

  5. Fry the cutlets slightly again in boiling lard.

  6. Arrange the cutlets around a pyramid of green peas and pour white sauce around the base.
