Ingredients

Directions

Make the aspic

  1. In a large pot, combine the cold water, gelatin, French vinegar, onion, celery, and bay leaf.

  2. Bring the mixture to a gentle simmer, stirring until the gelatin is fully dissolved.

  3. Remove from heat and let it cool slightly before straining to remove solids.

Set and serve

  1. Pour the liquid into a mold and refrigerate until set, about 4-6 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable gel as it cools.
French vinegar
Adds acidity that brightens the flavor of the cooked liquid.
Celery
Adds savory aroma to the stock as it simmers.
Onion
Adds savory aroma and depth to the stock as it simmers.

The step that matters

Dissolving the gelatin fully before setting. Gelatin must be completely dissolved with gentle heat, not boiled hard, so it sets evenly. Undissolved granules leave weak spots, and a rolling boil can weaken gelatin's setting power.

Swap the celery

How well each one fits the dish's main ingredients (gelatin, vinegar, onion):

  1. Garlicfits better
  2. Tarragonfits better
  3. Celerythe original
  4. Capersfits about as well

Fit is the average pairing score against gelatin, vinegar, onion. Candidates are from the same food group and used in at least 100 recipes.
