Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and a smooth, creamy body to the set dessert.
Gelatine
Sets the liquid mixture so it holds its shape when chilled.
Orange juice
Adds bright citrus flavour and aroma to the cream.
Lemon juice
Adds acidity that sharpens the sweetness and balances the flavour.

The step that matters

Dissolving the gelatine fully. Gelatine must dissolve completely in the hot cream mixture before chilling. Undissolved granules leave gritty specks and weaken the set, so the mixture should be heated gently until no grains remain.

Swap the orange

How well each one fits the dish's main ingredients (cream, sugar, lemon):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits about as well
  4. Limefits less well

Fit is the average pairing score against cream, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
