What each ingredient does

Bread
Provides the crisp, golden base that holds the toppings.
Butter
Frying fat that browns the bread and adds richness.
Green butter
Adds fat and flavour between the bread and the seafood topping.
Prawn or lobster meat
Main topping that supplies the seafood flavour and savoury body.
Mayonnaise sauce
Adds richness and moisture to the topping.

The step that matters

Fry bread in butter until pale golden. Frying gives the bread a firm, crisp surface that resists soaking up moisture from the topping. Browning too far turns it bitter, and undercooked bread stays soft and soggy.
