Partridges with Onion Puree

Ingredients

Directions

  1. In a pot, combine bacon, onion, peppercorns, salt, and pepper with enough water to make a broth.

  2. Simmer the partridges in the broth for about 45 minutes until tender.

  3. Remove the partridges and drain them, then keep them warm in a covered pan.

  4. Strain the cooking liquid and set aside.

  5. Simmer the large onions in milk until tender, then drain and chop finely.

  6. Pass the chopped onions through a sieve and mix with melted butter and the reserved stock to create a rich puree.

  7. Heat the puree until boiling, then serve the partridges topped with the onion puree and garnished with crispy fried bacon.
