What each ingredient does

Horseradish
Supplies the sharp, pungent heat that defines the sauce.
Cream
Adds richness and fat that softens the horseradish's bite.
Vinegar
Adds acidity that sharpens flavor and balances the cream.

The step that matters

Heat without boiling. Boiling can make cream separate or curdle, and strong heat drives off the sharp volatile compounds that give horseradish its bite. Gentle heating keeps the sauce smooth and pungent.

Swap the horseradish

How well each one fits the dish's main ingredients (cream, vinegar):

  2. Horseradishthe original
  3. Onionfits about as well
